Alkemē’s Soil to Plate: Provençal Black Winter Truffle Dinner 3/14/26
This dinner was never on the calendar.
After Hue-Chan’s recent truffle hunt at Les Pastras—an organic truffle farm in Provence—wandering rain-darkened groves and tasting black winter truffles lifted warm from the soil, we knew the season couldn’t pass unmarked.
We have reserved the estate’s final winter harvest of tuber melanosporum. The truffles will travel from Provence to Santa Fe just days before the dinner, arriving at their quiet, fleeting peak.
On March 14, we’ll gather for six original Alkemē courses that follow their arc—from soil to steam, from forest to flame.
It wasn’t planned.
It won’t linger.
And it won’t return this season.
Seating is limited to our back dining area.
This is winter’s last breath before spring—and we would be honored to share it with you.
